Ingredients
- 16 oz pasta, cooked and drained
- 4 oz prosciutto
- 1 ear of corn, charred
- 3 small peaches, sliced
- 1 small red onion, sliced
- 1 cup cherry tomatoes, sliced
- 6 oz Roth Hot Honey Gouda, diced into chunks
- 1/2 cup olive oil
- 2-3 tbsp hot honey
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- salt to taste
Method
- Heat oven to 400°F and add prosciutto into a flat, layer and cook 10-15 minutes or until crispy. Set aside.
- In a large bowl, add pasta, charred corn, peaches, tomatoes, sliced red onion and Roth Hot Honey Gouda chunks.
- Mix together and top with Roth Hot Honey vinaigrette.
