Baked Goat Cheese Dip

The easiest baked goat cheese dip with our fresh Plain Chèvre goat cheese, tomatoes, white beans, olives and lotsa garlic. Spread it on crackers or baguette slices for an easy appetizer, or toss with cooked pasta for an entrée.

Ingredients

  • 2 cups cherry tomatoes
  • 1 1/2 cups pitted olives
  • 1 (15-oz) can white beans, strained & rinsed
  • 1/2 cup fresh garlic, chopped
  • 1 cup olive oil
  • 3 fresh rosemary sprigs
  • 2 (4-oz) logs Roth Plain Chèvre goat cheese or 1 (8-oz) log
  • Salt

Method

  1. Preheat oven to 400 degrees F. Add cherry tomatoes, olives, white beans, garlic and olive oil to a baking dish. Toss with a few pinches of salt.
  2. Next, add goat cheese logs to the top of the mixture, then add whole rosemary sprigs.
  3. Bake for 45 minutes until hot and bubbly.
  4. Remove from oven and let sit for 10 minutes. Serve with toasted baguettes, crackers, or toss with freshly-cooked pasta.
