BBQ Chicken Salad with Smoked Gouda

If you love BBQ Chicken Salad, this version has nothing on its Panera, California Pizza Kitchen, and Cheesecake Factory counterparts. Loaded with BBQ chicken, Smoked Gouda, and tons of fresh veggies, this salad is hearty, filling, and the opposite of boring.

  • 2 heads chopped romaine lettuce
  • 1 (6-oz) wedge Roth Smoked Gouda cheese, cubed
  • 1 large avocado, cubed
  • 1 cup chopped rotisserie chicken, cubed
  • 1/2 cup red onion, finely diced
  • 1/2 cup grilled corn
  • 1/2 cup cooked black eyed peas
  • 1/2 cup cilantro, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fried onions
  • Kosher salt, to taste
  • 1/4 cup barbecue sauce
  • 1/3 cup ranch dressing
  • 1 tablespoon lime juice


  1. Add chopped romaine to a bowl. Add cheese, avocado, chicken, red onion, grilled corn, black-eyed peas, cilantro, cherry tomatoes, and fried onions on top. Add a sprinkle of salt on top of everything.
  2. Top with a drizzle of BBQ sauce and a drizzle of ranch dressing.
  3. Finish with a squirt of lime juice, and toss it all together.
  4. Serve immediately and enjoy!
