Garden Pesto Grilled Cheese

This easy pesto grilled cheese requires just four ingredients — including our Creamy Havarti cheese — making it the simplest summer lunch or dinner.

Ingredients

  • 4 slices thick, sourdough bread
  • 2 cups Roth Creamy Havarti cheese, shredded
  • Unsalted butter
  • 4 tablespoons pesto, divided
  • Salt

Method

  1. On a large cutting board, lay out bread slices. Spread an even layer of unsalted butter on outer sides of bread. Sprinkle each slice with a little salt.
  2. Next, flip bread over. Add shredded Havarti on top of two slices. Spread half the pesto on two slices. Squish cheese and pesto slices together, forming two sandwiches.
  3. In a medium cast iron pan over medium heat, add one tablespoon butter. Add sandwiches, and cook for 2 to 3 minutes per side, or until golden brown
