Hot Honey and Gouda Grilled Chicken Sandwich

This Hot Honey and Gouda Grilled Chicken Sandwich is topped with melty Gouda AND Smoked Gouda cheeses, then drizzled with homemade hot honey. Add lettuce, tomato, and onion and you have an INCREDIBLE sandwich.

Ingredients

  • For the Chicken Marinade:
  • 1/4 cup olive oil
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • Juice from one lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • For the Hot Honey:
  • 1/2 cup orange blossom honey
  • 2 to 3 Calabrian chilies
  • For the Sandwiches:
  • 6 chicken cutlets or boneless skinless breasts
  • 6 sesame seed buns
  • 1/2 cup Roth Gouda cheese, shredded
  • 1/2 cup Roth Smoked Gouda cheese, shredded
  • Lettuce, for serving
  • Tomato slices, for serving
  • Thinly-sliced red onion, for serving

Method

To make the Chicken:

  1. Add olive oil, Dijon mustard, honey, lemon juice, garlic powder, onion powder, dried parsley, smoked paprika, salt and pepper to a bowl. Whisk together. Pour over chicken and marinate for 15 minutes up to 24 hours.

To make the Hot Honey:

  1. To make the hot honey, add the honey and chiles to a jar and use an immersion blender to puree. Set aside.

To make the Sandwiches:

  1. When ready to cook, preheat the grill to 400 degrees F. Cook on each side for 4 to 5 minutes with the lid closed. During the last minute of cooking, add a generous amount of shredded Goudas and close the lid to melt the cheese.
  2. Serve on a bun with lettuce, tomato, and red onion. Drizzle with hot honey and serve.

*Notes: If using chili paste, start with a teaspoon and taste until you get the desired amount of heat. If using chicken breasts, pound to even thickness.
