Lazy Lady Breakfast Strata

The simplest, easiest, and cheesiest breakfast strata for brunch or any day of the week. Made with our creamy Gouda or 3 Chile Pepper Gouda for a smoky touch of heat.

Ingredients

  • 1 English muffin, cut into chunks
  • 3 eggs
  • 1/2 cup milk
  • 1 cup Roth 3 Chile Pepper Gouda or Gouda cheese, shredded
  • 1 teaspoon Dijon mustard
  • Salt and pepper
  • 1/2 cup baby spinach leaves
  • 1/4 cup thinly sliced red onion
  • Grated Parmesan cheese (optional)

Method

  1. Heat oven to 400 degrees F.
  2. Spray a small ovenproof skillet with cooking spray. Arrange the English muffin chunks in the skillet.
  3. In a medium bowl, whisk together eggs, milk, Gouda cheese, and mustard. Season with a pinch of salt and pepper. Pour the mixture over the muffin pieces, submerging each piece in the egg mixture.
  4. Tuck the spinach leaves into the strata and sprinkle red onion on top.
  5. Bake 30 minutes or until the eggs are set and the cheese begins to bubble on top.
  6. Grate Parmesan cheese on top, if desired, and serve immediately.
