  • 1 (6-oz) block Roth Jalapeño Havarti cheese
  • 4 slices white bread
  • 1 tablespoon salted butter
  • 4 tablespoons cherry tomatoes, diced
  • 2 tablespoons red onion, diced
  • 2 tablespoons cilantro, chopped and packed
  • 4 tablespoons pickled jalapeños, patted dry


  1. Shred Jalapeño Havarti cheese, then divide in half. Evenly distribute half of the cheese on two slices of bread, then top with cherry tomatoes, onion, and cilantro.
  2. Add remaining cheese (reserving 4 tablespoons for the crust) on top of the tomatoes, onion and cilantro mixture, then add remaining slices of bread on top.
  3. Melt half the butter in the pan over medium heat. Add 2 tablespoons of the reserved shredded cheese and half the pickled jalapeños. Place sandwiches on top of the bubbling cheese and cook for a few minutes until a golden cheesy crust has developed on the bottom. 
  4. Meanwhile, butter the tops of the sandwiches and press the jalapeños down into the bread to “glue” them there. 
  5. Remove sandwiches from the pan and add the remaining cheese to the pan. Place sandwiches jalapeño-butter side down, and cook until all the cheese has melted and a golden cheesy crust has developed. 
  6. Let rest for 1 minute before serving.
