Ingredients

  • 1 large sweet onion, thinly sliced
  • 1 tablespoon olive oil
  • 2 small fuji apples, cored and thinly sliced
  • 1 (1-lb) box frozen cheese pierogis (or about 12 pierogis)
  • 3 1/2 cups fresh spinach (about 1/2 bag)
  • 1 (6-oz) block Roth Creamy Havarti cheese, shredded
  • Salt and pepper

Method

  1. Preheat oven to 400 degrees F.
  2. In a large ovenproof skillet, add onions, olive oil, and a hefty pinch of salt. Cook 5 minutes. Add apples and cook about 3 minutes, or until apples begin to soften.
  3. Stir in frozen pierogis. Place in the oven, and bake 15 minutes.
  4. Remove pan from the oven. Stir in spinach and another pinch of salt. Top with shredded Havarti, and bake another 15 minutes.
  5. Without removing the pan from the oven, turn oven to broil and broil for 3 minutes or until the top is golden and toasted.
  6. Remove from oven and enjoy!
