Ingredients

  • 1 tablespoon oil
  • 1 large onion, finely chopped
  • 2 teaspoons fresh ginger, minced
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 cup brown sugar
  • 4 cups apples, peeled and diced
  • 1/2 cup apple cider, apple juice, or water
  • 2 tablespoons apple cider vinegar
  • Juice from one lemon
  • 1/2 cup dried cranberries

Method

  1. Heat oil in a Dutch oven or large saucepan over medium heat.
  2. Saute onions for 1 to 2 minutes, or until translucent.
  3. Add fresh ginger, cinnamon, nutmeg, allspice, and cloves, and cook for an additional minute.
  4. Add brown sugar, apples, cider, apple cider vinegar, salt, and lemon juice.
  5. Reduce heat to low, and let the apples cook down and begin to soften for about 10 minutes.
  6. Use a potato masher and mash about half of the apples.
  7. Add dried cranberries and continue to simmer for an additional 15 to 20 minutes, or until the mixture is thick and the liquid has evaporated.
  8. Let cool and transfer to a jar with a tight-fitting lid.
