Baked Blue Cheese Pasta

Ingredients

  • 2 (4-oz) packages Roth Buttermilk Blue® cheese
  • 1 pound thick-cut bacon
  • 2 pints cherry or grape tomatoes
  • 1/2 pound dry pasta of your choice
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 4 garlic cloves, minced
  • 2 cups fresh spinach, packed

Method

  1. Preheat oven to 400 degrees F.
  2. Prepare pasta al dente according to package. Reserve 1 cup pasta water for later in the recipe. 
  3. Line a baking sheet with parchment paper. Add bacon slices to the tray, spacing apart equally. Set aside. 
  4. In a medium baking dish, add tomatoes, olive oil, and salt. Toss until combined. Place blue cheese wedges on top of the tomatoes.
  5. Place baking dish in the middle rack of the oven and the bacon sheet pan below it on a lower rack. Bake both dishes for 30 minutes, flipping the bacon halfway through. 
  6. Once the bacon is crispy (at around 30 minutes), remove from the oven, and set aside to cool. Crumble once cooled.
  7. Increase the heat to 450 degrees F for another 5 to 10 minutes or until the tomatoes are starting to blister and caramelize.
  8. Remove baking dish from the oven and immediately add fresh garlic. Stir to combine. 
  9. Add the crumbled bacon, fresh spinach, and cooked pasta on top. Toss everything together until the spinach is wilted and sauce is creamy. If the sauce looks dry, add 1/4 cup of reserved pasta water at a time to loosen it up. 
  10. Season with more salt and pepper to taste before serving, if needed.
