Our fan-favorite Buttermilk Blue® adds big flavor to this blue cheese corn dip—perfect for tailgating, game day, and home entertaining.
- 1 (10-oz) bag frozen corn, thawed
- Juice of 1 lime
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 cup (6 ounces) Roth Buttermilk Blue® cheese, crumbles
- 1 tablespoon chili powder
- 2 tablespoons smoked paprika
- Salt and pepper, to taste
- 1 tablespoon cilantro
- Blue corn tortilla chips, for dipping
- Toss all ingredients, except chips, until well mixed. Chill.
- Serve with blue corn tortilla chips for dipping.
