Smoky Blue Cheese Corn Dip

Our fan-favorite Buttermilk Blue® adds big flavor to this blue cheese corn dip—perfect for tailgating, game day, and home entertaining.


  • 1 (10-oz) bag frozen corn, thawed
  • Juice of 1 lime
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup (6 ounces) Roth Buttermilk Blue® cheese, crumbles
  • 1 tablespoon chili powder
  • 2 tablespoons smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon cilantro
  • Blue corn tortilla chips, for dipping


  1. Toss all ingredients, except chips, until well mixed. Chill.
  2. Serve with blue corn tortilla chips for dipping.
