Smashed Potatoes with Blue Cheese... what more could you want? An easy, 4-ingredient side dish for whenever the carb craving strikes.

  • 1 pound baby potatoes
  • 1 to 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (4-oz) wedge Roth Buttermilk Blue® cheese, crumbled
  • 1 to 2 tablespoons honey
  • Fresh chives, chopped (for garnish)


  1. Place potatoes on a baking sheet, and toss with olive oil, salt and pepper. Roast at 400 degrees F for 25 minutes.
  2. Remove potatoes from the oven, and lightly smash them with the back of a fork until they pop and flatten. Place back in the oven for another 20 minutes.
  3. Remove potatoes from the oven, and top with crumbled Buttermilk Blue®. Broil for 1 to 2 minutes, or until the cheese is melted.
  4. Drizzle with honey and garnish with fresh chives. Serve and enjoy!
