Recipe by: Meiko, Meiko and the Dish

Ingredients

  • 1 1/2 cups Roth Grand Cru® cheese, finely shredded (about 1 (6-oz) wedge)
  • 1/2 cup unsalted butter, at room temperature
  • 4 cloves fresh garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 loaf of Italian or French bread
  • Parsley, minced, for garnish (optional)

Method

  1. Preheat oven to 425 degrees F.
  2. Grate cheese as fine as possible, using a microplane, if available, for a very fine shred.
  3. In a food processor, mix butter, 1/4 cup shredded cheese, fresh garlic, Italian seasoning, granulated garlic & onion, red pepper flakes, salt, black pepper, and olive oil. Blend until smooth.
  4. Using a bread knife, slice bread into roughly 1-inch thick slices, NOT cutting all the way through the bread. Use a butter knife to generously spread butter mixture between each slice. Use a basting brush to brush the top of the bread with residual butter. Add remaining shredded cheese in between each slice of bread.
  5. Wrap the bread completely in aluminum foil, and place on a baking sheet. Bake for 15 minutes, then open the top of the foil, and bake another 5 minutes. Remove from the oven, and sprinkle parsley over the top, and serve warm.
